Another good adaption of X-men Evolution is Amanda Sefton. She made a big impression on my family too lol One of the few human characters not invested in bigotry being a black girl was impactful. She kept the X-men's secret and dated Kurt.

X-men and mutants definitely are diverse. They're just underutilized and neglected by Marvel, like most characters of color. (And you probably don't actually read a lot of the X-comics)
