In the finale for Book One, Aang meets a spirit called Koh who shows him a face somebody in his past life knew. This woman was the fiancee of the most recent Water Tribe Avatar before Korra, Kuruk. Her name is Ummi, and she is also the face of this twitter account =)
While Avatar Extras often provides interesting trivia about the series, it's sometimes incorrect.
Avatar Extras for the Crossroads of Detiny says "Fact: Katara is the only person to touch Zuko’s scar in the series."
This is untrue- Mai touches his scar in the following episode.
Growing up, Aang had a friend in the Fire Nation named Kuzon. Aang also adopts this name when he travels in the Fire Nation. Kuzon is never seen in the series, but he makes an appearance in one of the comics produced for Nick magazine, later redistributed in "The Lost Adventures"
One scrapped episode concept would have revealed that Momo was the reincarnation of Monk Gyatso.
Save two exceptions (pictured below) all dragons in Avatar have been red or blue.
In the pilot for Avatar: The Last Airbender, Aang is played by Mitchel Musso. He was replaced by Zach Taylor Eisen for the series.
Turf Wars artist Irene Koh sometimes includes fictional characters or real life people in background. Pictured is a crowd scene in Turf Wars: Part One which includes Kakashi, Sasuke, and Sakura from Naruto, and Usagi from Sailor Moon (circled to be easy to spot).
The only known characters in the franchise to have pursued romantic relationships after being widowed are Hakoda and Kanna: both members of Katara and Sokka’s family.
While the Avatar universe is filled with may creatures that are hybrids of real world animals, there are several that aren't. Many are familiar with Bosco the bear, but there are several others that aren't. Bumi owns a rabbit, and the herbalist from "The Blue Spirit" owns a cat.
As a child, Toph ran away to the Foggy Swamp, which was near Gaoling. This is part of why the swamp was able to show Toph’s image to Aang when he was looking for an earthbending teacher. Toph later returned to the swamp in her old age.
