For each sequence, I would need to identify the areas of the sprite sheet that were safe to overwrite, insert English letters and words there, and then edit each sequence of GPU calls to construct the new lines of text as a series of rectangular cut-outs.

A developer on Aconcagua snuck a hidden reference to mecha anime "King of Braves GaoGaiGar" into the script. I love finding these little Easter eggs.
A tiny little Easter egg in Harmful Park:
One of the artists left their "Hidden Treasure" in part of the intro cutscene that is normally covered up by a character sprite.
There's a very interesting bit of cut content in Aconcagua regarding Che Guevara. The five protagonists would have commented on a poster of him hanging in a military base.
In the final game, it has been edited into a different character.
