Honestly I don't see it, most of the designs are closer either to Gundam or to a default human proportions, not to a exaggerated proportions of Evangelion. There are some more skinny than others, sure, but I wouldn't call it a prevalence.

Idolmaster Xenoglossia 2007 anime co-producer of Gundam Seed and Evangelion. The plot is very well done with the war robots and features Haruka and Chihaya fighting each other.

There's also the fact that a lot of mdoern anime is now influenced by Evangelion, so by being influenced by other anime, I'm influenced by Evangelion. A big inspiration was Kill La Kill (if you look at Masako she basically started out as short haired Satsuki pfft)

Palkia always reminded me of the Mass Production Eva from Evangelion. That plus a dragon-like form is what I imagined Palkia should have been; not the Roman soldier centaur abomination we got. It's not a perfect remake, but I do like mine way more than what we got.
