First you can totally continue from where the anime left off. Both S1 & S2 cover what happens in the first 15 volumes of light novel (LN), which correspond to Arcs 1-4 in web novel (WN) pretty well. There well be some new info here & there

There are 8 volumes of Battle Angel Alita, 19 of Last Order & 7 of Mars Chronicle - 35 volumes with numerous story arcs. Alita's story is a heroic saga which has gone on for 30 years and will likely go on for at least 30 more years on the big screen.
