"Seiji's Pumpkin Soup" is my modernized version of the classic Kabocha soup. Kabocha is a Japanese pumpkin that tastes a bit like butternut squash & acorn squash. Ingredients include carrots, onion, fresh ginger, veggie broth, white pepper, salt & cream (vegans sub coconut cream)
