Why do i like the look of just.. gray more than actual colors on anything

I know most prefer actual color but i feel it's so busy looking, so even if i flat colored something i tend to revert it back to grayscale anyway cause it's more pleasing to look at for me...

Basically: Colorize the grayscale, fill in the white space with color, added shading details to shadows and shines, and then touch up details like sweat, steam, glows.
