If you wanna use a non-binary term for Latinos..
Use "Latine"
It makes grammatical sense and its actually pronounceable in Spanish, and unlike "Latinx" it wasn't made by a 3rd gen who doesn't understand the language, plus it doesn't sound like a slur used against Asian people...
