Though it's not true for all of them, when I look at anime art and shows from the 2000s, I notice a lot of them have the characters with tall, kinda square-ish eyes

Now we get to the late 2000s - early 2010s. Sonic is drawn completely differently. Sonic is drawn much more angular. Little angles have been added to places like the hands and socks to make Sonic appear more sharp. The shading has also been very toned down.
