I know little bout sculpting, but in terms of stylizing Joel (in 2D) a great example comes from 's Disney adaptation. It's a single perspective but could hopefully help/inspire.

So it's going to be a CG characters, but they're going to be stylizing them and using hand drawn elements so that they look 2D.
