Pan fried Glo-Trout is a real treat out on the trail. They are most active around sunset/sunrise near river bottoms where they come in search of bugs n stuff. Catching one is easy enough, just look for lights in the water! Don't worry, the glow cooks off quickly and is non-toxic.
