One of my favorite illustrators in this field is Anastassja Archipowa. She's illustrated many of Andersen's fairytales like the Snow Queen or Little Mermaid, although I don't know how many are available in English. Also Grimms Tales and some Russian Tales.

I just finished Super Paper Mario! I already did it a long time ago but I was too young to understand English. Not my favorite Paper Mario in terms of gameplay, but great story, especially the ending, I wanted to cry 😭 Now I can’t wait to play The Origami King!
