2/2 Personally I like to know what the client want in detail, so I can make a first draft based on that info, and then tweak it until the the client is satistfied with the design, only then I start the painting process. it's the best way to avoid the "I don't like what they do".

You'd often see models with vertex coloring to further add detail, or add shading to untextured polygons to save on texture space. Hmmm... Vertex coloring seems to be super rare nowadays, though...
