A must see for slice of life is definitely Mushishi. Best one in the game. It's also a seinen, very mature. Some of the best backgrounds and art in anime.

Another one of my personal favorites is Kids on the Slope. A seinen, has some romance, and GREAT music.

My mom asked me to redraw Ginko, from Mushishi. It was fun but I get tired from drawing it ;o; rip

Mushishi. The protagonist forced to constantly wander from place to place is an apt metaphor of how life is, or can feel. Some episodes switch genres, too, from Horror to SoL, and I find that quite true to life, too. Watching it feels cathartic.
