The only "non-binary" character I've seen across all the anime/manga/etc I've consumed (excluding futas, 99% of which are basically girls with bonuses) is Shinatose Izana from "Knights of Sidonia," who belongs to a genemod class of neo-humans. She morphs into a cute girl later.

With the cavalry pics I just go where inspiration takes me as to what should be riding what. With the anthropomorphs, like the below, I usually do a batch in October randomly matching beasts and professions people suggest.
