Because what is gray? Granite, storm clouds, maybe silver? Can't compete with summer skies, bluebells, sapphires. Blue/azure eyes & golden hair (She-Ra) are more striking than gray eyes & "sandy blond" hair (Adora).
Canonically only Spinnerella has clear blue eyes.

One ring controls straw and hay (gold), another bends wood (carved wood, inset with Amber and Jet), and the last can move the earth itself (marble and granite)
