Most Bulborbs have their change in coloration happen behind their eyes and mouth. The Hairy Bulborb’s is the only one different, with the change in color just being it’s nose. Even the Snow Bulborb’s color change happens a little further up than other Breadbug mimics.

100% those are 2 different models.
I guess they made him more bulbous over time? The hair in the first image was so promising for rayman looking closer to the cgi legends design (which would fit this games animation style). But oh well, he's looked worse.
