The black, white, gold and red is meant to represent the alchemical magnum opus, with red and purple being symbolic of alchemical perfection.
The reason gold isn't on Zeo's first outfit is because the yellow step is sometimes seen as simply an extension of the white.

I'm so glad I'm an artist, because I see a lot of people "headcanoning" characters who are POC as pale, pasty white. And I can post my art ahead of time and say "look, these characters are obviously not white. Get over it or get out."
