ライティングが一番やっかいよね。私はUnityでのベイクは使ってなくて、テクスチャで影つけてUnlitにするか、UnlitWFシェーダーで影をつけてもらってる。
テクスチャに影や光を入れるのは3D-CoatでAOとライトマップをレイヤー分けして保存したものを重ねてます。
