One "playing on easy mode" shtick I love is Tales of.
Specifically Tales of Destiny 2.

This big guy, Barbatos, gets a special one hit KO wipeout move if you play on Easy Mode, and ONLY in Easy Mode.
That's only ONE of his nasty nasty game tricks, but that one cracks me up!
