The cover of volume 6 of manga might just be my favorite. It's refreshing to see quality art that focuses on minor characters. Eva Unit-03 is pretty cool too. Shame it didn't get to stick around.

I've always really loved this illustration from volume 6 of Sadamoto's Evangelion manga. Great use of warm tones, focus on one of the better arcs of the series, and a nice break from the main characters and Eva Units.
