It depends on how in depth I'm going. If I want just lineart then usually 3 but if we're going all the way somewhere between 10-30. I know this one was 28.

it depends really, while using multiply layers colour picking also comes into play. it's just diffrent. The way i personally do it is i use normal layers for individual segment's shading and multiply/overexpose for more ambient shading
