I usually start off with a rough thumbnail like this with general solid shapes and interesting rock patterns with painting on and erasing with textured photoshop brushes I made, and proceed to paint , and then apply a little texture like grass/rock to finish

A very common trick to pulling off back poses (that I see used super frequently actually) is to take the front pose you made, flip it and then just draw the back over it, here's an old rough ass example I did a year or so back.
