Escoffier’s menu at the Carlton Hotel in 1909 - caviar, beef broth, lamb, quail, oysters, asparagus and his famous Peach Melba. The Carlton on the corner of the Haymarket and Pall Mall was demolished some fifty years later for the New Zealand High Commission.
