I think that's just because the models are lower poly, like they never do any finger gestures so they didn't bother modelling their hands, people won't really notice unless they completely analyze their designs

This is how I practice:

Deconstruction: break down the gestures, shapes and proportions of a reference subject.

Recall: use the deconstruction to redraw the subject. In my case, at a front angle.

Critique: spot the mistakes.
