It's called Azuvern! They are one of the earliest monsters to be befriended by mankind. They are popular for transportation because of their intelligence, loyalty and endurance.

This time, it's not an entirely new creature - it's on The Bestiary's cover art. The Turncat (name inspired by turncoat) is a feline that can melt into the shadows and thus follow its prey or keeper very closely.

I've mentioned before that monsters in my personal mons setting can evolve, but unlike Pokemon it's not practically necessary for more power, it's more like an option to become a different mon. An example would be "Flyball" and "Flyclops" here
