My personal theory is that Titans age mentally at the same rate as the typical witch/human, however they just never stop growing physically due to being so magically potent. And the Trappers disguise themselves as young adults since they'd be the easiest to disguise as.

The thing is, when disguised, they all seem to dress and act like adults. All of them wear armor and formal robes, not something you'd think a child would wear. Not to mention that their voice would most likely blow their disguise and give it away that they're not a baby Titan.
