More bad enemy types were the angels and floating buzzsaw guys. The angels were only vulnerable to certain kinds of weapons so if you didn't have those equipped you were out of luck. Plus they liked to attack from inside walls. The knights were just boring to fight in general.

I'm hard-pressed to think of another cartoon (anime or not) that did this as much or as well as Sailor Moon though. Modern cartoons, especially, are obsessed with "staying on model", which discourages these types of things. That's why the expressions in Turning Red are a big deal
