It unfortunately seems the Yenpress release of K-on! Shuffle will only have chapter 0 in colour with any others chapters grey scaled like in the JPN tankoubon.
This wasn't the case with the original series where Yenpress had them in their original colour

In 18~ hours, the new K-on! Shuffle chapter will release along with the new front cover artwork.
This is likely to be Yukari (protag), but Kakifly has broken the trend once with Risa and Ranka. So anything is possible
This will also be the 2nd chapter with colour for Volume 3
