NovelAI does a good job on making Knights, although they seem to be quite Dark souls inspired.
I tried to spice it up with some.. Funk.

Novel AI is pretty fascinating. For example, I tested it by giving it a garbage MS paint sketch and turned it into my desired profile picture, adding more descriptive prompts over time to get desired effects. #NovelAI #NovelAIDiffusion
