Form 2, or Makashi, was a step up from Shii-cho. Predominantly a one-handed form, Makashi is all about parrying and small, quick, precise cuts and jabs. The best real-world parallel is Fencing. Count Dooku is a master of this form and tailored his lightsaber specifically for it.
The first lightsaber form is called Shii-cho. It was the first lightsaber form invented shortly after the first lightsabers were invented. As such, it's outdated, and most Jedi learn it as an introduction to lightsaber combat before moving on to one of the other 6 forms.

I know it's almost a cliche at this point but for me it's Darth Revan. Revan had so much control and charisma, and Kreia really gives insight and depth to his motivations~
