I just finished Star Wars Jedi: Fallen Order. I gotta say, it was definitely a lot better than I ever expected it to be. Excellent environments, combat, and story above all.
If you're a fan of Star Wars and Dark Souls style combat, I would definitely check this one out!

If I had to pick just one, I really think Jet from Cowboy Bebop would be a lot of fun to hang out with. You know he's got a lot of great stories to tell.
Or maybe Kaji from Evangelion for the same reasons 👌
