The reason American Sonic looked weird is similar to American Kirby box art.
They thought that if they gave Sonic a more aggresive design with realistic features, it would appeal to Americans as they're usually seen as aggressive.

Before the more known Sonic design was established, Sonic's spines were built like actual Hedgehog spines. Attached together from head to tail.
The Sonic design of today has 6 symmetrical spines on the back of his head, and three on his back.
