When painting cacti, have form and function in line with your light source and then cut loose and have fun.
And remember, you don’t have to paint every single needle you see.
Connections are important. Painting negative shapes helps.

Texture, as a design element, is one of the fun ways of cutting loose that fear and allowing the physical elements of paint, water, paper, to mixed with time, to do their job.
I often say, watercolor painting is 50% doing the work, and 50% waiting.
