Because all it does is slightly tweak the mindset of Shirou's character.
Sakura as a heroine pushes Shirou the most as a character. Making him reflect on his ideals and what they truly constitute.
Genius route structure.
There is glory to be found in heroism.
But you also find hardship along the way.
You witness more of the world around you and realize that sacrifice is a necessary component of selflessness.
Sometimes you have to pick what you can "save" and the contrast of this message...
Fate/Stay Night has one of the best route structures I've ever seen for a visual novel.
One that develops an overarching concept of heroism that starts with idealism and ends with abandonment.
