Some friends and I have been brainstorming ideas for a medieval-themed Donkey Kong game and I'll be illustrating some of the concepts over time!
This is the basic Kritter-type enemy, a bandit! He can't do much more than walk steadily ahead, weighed down by his spoils.
Gonna try and come up with ones no one else has said yet.
Dang it I love King Trode from Dragon Quest 8. His concern and respect for his daughter is so strong, and he's clearly more concerned about removing the curse for her sake rather than his own. He's also just really funny
I really love recurring villains who actually seem to change from previous losses. Whether it's shaking things up significantly in an attempt to make things different this time, or a physical change as a result of their past experiences. They adapt, overcome, and don't give up.

This doesn't go for ALL my favs but I tend to like villains (major or minor) that have a sense of swagger/are really bombastically full of themselves. Even though they're against you, I think that unapologetic confidence is something I admire and envy in a way and it's always fun
@Porky_Draws I don't really strive for anything in particular, but I realized recently that this style is pretty much what I want to do, keeping things simple and cartoony but with gorgeous and rich coloring.
