I go about mine in Zbrush, by making a duplicate all-white model, then I use the recent AO masking feature and add a couple shades of gray. I use Substance Painter to merge the flat colors with two copies of the AO, one multiply and the other linear burn, both 50%

A neat little trick I kinda figured out for Herbert's new eyes was a single eye sphere, and two quarter spheres with a transparent pupil texture that move independently. You could trim a lot of polys down, but seeing the sphere center helps with placing the eye bones.
