Ok, nvm I was able to do something similar by using a really roundabout way.
I created a specific state that affects Torchic only.
If you use the stone on Combusken, it will not work because he is immune.

So still not amazing, but better imo.

If the stone is used on a human target or the creature is the wrong level, nothing happens. (2)

Ok, so here's what I managed to do!
Evolutions can be triggered through items used, level is kept, graphics and name are changed. However, it cannot check for specific species, so everyone can evolve into anything. (1)

Lol, I found screenshots of that Pokèmon system I was trying to make ages ago with only events.
Of course it went nowhere cause setting up something like that with events is needlessly complicated and stupid so I gave up on it and accepted that Essentials was the way to go.
