Amy is OPENLY loving, sweet, expressive, and compassionate with no need to hide it from anybody.
Perhaps Sonic sees her as bothersome and uncool when she is cuddly and vulnerable, but then he praises her when she takes charge and helps use her strength to overcome challenges
