In terms of uprezzing, you'll note the top sprites here. These are the original sprites for the first release. Later on, the game got released for better phones, and they uprezzed them.

They took the original sprites, manipulated them to be the new size, then redrew them.

Source files for the 'Sonic Unleashed' JAVA port have been found. This appears to be one of many versions of the game, including Sonic sprites which are being uprezzed from a previous mobile port.
