"It is said to be quite large, with horns and a fiery face, quite hideous" and to have a "long beard".

It's a ... beaver!
Isidore of Seville (Etym. 12, 2:21): The beaver (castor) is so named from being castrated. They are hunted for their testicles (for medicine); when a hunter comes near they bite off their testicles to save themselves.
