This is shown in the manga as Erwin is seen thinking on Levi's "wings", defending Levi & his friends when they aren't around, not talking down to him ever- unlike the OVA where he's more critical, disbelieves they could be self-taught, & actually does seem to patronize Levi

Levi's "abnormal" speech is so important to his character & virtually every line in it is either emphasized or references something elsewhere.
Beginning with with this vs. his starving to death in squalor on the floor in the room holding his mother's dead body in the only bed
