Re-watching Gurren Lagan and it really pains me that they didn't continue making a series about the Spiral King. His appearance drastically changed because of his continues use of Spiral power.

I’d say Space Ghost Coast to Coast definitely fits that. Not only is it one of the first original CN shows, but it was also a standing example of how a show with reused assets and cheap animation can be extremely successful, even while departing so drastically from the source.
