Oh! I recommend to you the Undertale, Resident Evil Village and Super Mario Odyssey's (my faves) artbooks, is really interesting see all of the scrapped concepts and process of those projects - And for artist, well, I always watch Marc Brunet's vids and of course, the mcyt artist
