Mario & Luigi: Bowser's Inside Story contains unused sprites of Mario being pressed into the shape of a key. Luigi would have needed to carry Mario on his head in this form, presumably to then insert him into a lock somewhere.

Here's another unused model in Super Mario Galaxy!
A low poly version of Peach's Castle. It was meant to be used as the reflection of the castle in the water, but the "reflection model" is baked into the rest of that entire level's model. This is a standalone.
