I have utilized a wide variety of opponents in my games but I think the most fun have been cultists and aberrations. I enjoy playing fanatics with an insane plan. I then add in aberrations summoned from the void for something unexpected. It both weirds out & motivates my PCs.

Undead aberrations taken over by an unidentified growing crystal. They've grown too heavy for flight but can fire searing beams of energy. Any dragon killed by the light will have its flesh turn into crystals before coming back to life.

Both aberrations (basically Lovecraft monsters) in D&D's lore, Aboleth and Ilithid represent two sides of the same coin. Aboleths represent an ancient foe from when the stars were new, while Mindflayers represent a foe you may yet become: both control minds.
