But now I've been checking out "The Settlers." Which is an excellent wee medieval Sim City-ish game, with more of a focus on roads, mines, and a little combat. The DOS version, though lacking the music I love, has used the extra colours and resolution well. (Amiga then DOS pics.)

I mean some of my favorite titles retain the medieval fantasy aesthetic, the difference is they weren’t greyed out and super serious. Even older titles than these of course had a refined palette due to tech limitations, but it still had a charm to it atop the key character art.
