Well, it's not really as simple as that. Sometimes it's part of an artists style to be a little exaggerated.

The artist in question- Carlos Gomez- has a pretty animated and cartoony style, and it's not meant to be "realistic" and instead something more fantastic.

I remember they'd tried to reboot Jak at least twice internally, but nothing ever came of it. They were going with a more realistic route, which was interesting. If it were up to me, I'd try to keep some of the cartoonishness in there. Try to find a good balance.
