TL;DR,This latest Tailstube didn't really "retcon", or "deconfirm" anything, it mostly reiterated that yes, Classic IS a younger version of Sonic and yes, Multiverse Theory, is very much a thing in the Sonic Canon, and other Sonics could possibly cross over in the future. (12/12)

I wonder if Sage is a sign that Sega's gonna be a bit more lax about non-Eggman humans being in Sonic stuff in the future. We still don't know for sure that Sage *is* a human but she sure looks like one. And there's also that mystery woman from the first tailstube video

So, at least right now, I don't THINK Sage is the AI voice companion people are talking about. I still think it's the pink-haired girl from the first TailsTube episode. The voice heard in one of the B-roll videos doesn't really fit Sage IMO.
