Gantz is weird but fun and gory. Bunch of people in limbo get forced to hunt aliens.
Vagabond is good but can get a little slow.
Blade of the Immortal has very beautiful art despite light characterization.
Evangelion was practically revolutionary, but kind of depressing.

Naoki Urasawa's work, such as 20th Century Boys and Monster, should also appeal to a Western audience with a grounded and plot-driven storytelling style.
Monster is about a doctor who is wrestling with saving the life of a child who turned out to be a psychopathic killer.
